I wondered how the ranking of the individual must be called a nickname, host, hostel, bed and breakfast.

Hostels are often colored and can be "home". It is true, Bed and Breakfast is actually someone's house and rented rooms. The owners live and eat with them, if desired. (kind of weird if you are not used).
